Measures

We have deliberately avoided specifiying quantities in the recipes, prefering to specify the ratios of the various ingredients where possible. This allows you the flexibility to use your own measuring containers/units to mix your cocktails. However, in order to fit the majority of cocktails into an 'average' cocktail glass (assumed to be smallest at approx 90ml), we have assumed a standard unit of 30ml, which is roughly equivalent to both the Imperial and US fluid ounce. This is often (although not always) the measure that is supplied as the cap to a cocktail shaker.

You will find frequent use of the term 'dash'. This is a rather variable quantity, often depending upon taste. In an attempt to try and standardise this, we have assumed 1 dash=2 ml, except for Angotura Bitters etc where a dash is determined by the nozzle on the bottle and is usually about 1-2 drops.

You will also find reference to the good old standard teaspoon, which again can be of variable size. We have assumed 1 Tsp=5ml.

As with all recipes, they are best used as a guide and adapted according to taste and creative flair.
